It's snowing. I can't even.
In case anyone had any doubts, the weather has officially reminded us that no, in fact, it is NOT actually spring yet despite whatever the lunar calendar might be telling you. It psyched us out with our three days of above-50F weather last week. From Monday to Tuesday, we dropped from 70 degrees to "feels like 22" overnight. Literally. Fake spring is just rude.
And now we're supposed to get 2-3 inches of snow today.
So, in order to feel less angry about the fact that it still feels very much like winter and I totally let myself get tricked by fake spring last week, I bring you this cocktail (or mocktail, if you make it without the rum). It's, more or less, a jazzed up pina colada. You could even turn it into a slushy cocktail if you blended is up with some frozen pineapple and ice.
If you're a midwesterner or east-coaster, you need this for two reasons:
- The cold, dreary, wintry weather is dragging on FOR.EVER. This is like a beachy, sunshiny vacation in a cup.
- It's Monday, and you might need a cocktail. Everyone should be rewarded for surviving a Monday.
Of course, if you're a west-coaster, you're allowed to celebrate Monday survival as well, but you might legitimately need this for it's "real" purpose: to be cool and refreshing on a warm day. It's supposed to hit 90F in my hometown this week. Lucky jerks.
amount below makes 1 cocktail, but is easily multiplied
1.5 oz (1 shot) dark rum (optional)
1/2 cup coconut milk
2 TB honey
1/3 cup freshly-squeezed clementine or mandarin juice
juice from 1/2 a lime
1/2 cup pineapple juice
1/2 tsp vanilla
- Combine all ingredients. Shake over ice until thoroughly combined. I shook mine in a mason jar, because I apparently do not actually own a cocktail shaker.
- Pour over ice, garnish with a clementine wedge, and enjoy!
